Protein intake is key to life. This study sought to characterize dietary protein sources in eight Latin American countries. Data were collected in the Latin American Nutrition and Health Study (ELANS); participants were from Argentina, Brazil, Chile, Colombia, Costa Rica, Ecuador, Peru, and Venezuela.n = 9218, 15–65 years).

The Project ELANS (Latin American Study of Nutrition and Health) is a multicenter study on nutrition and health that was carried out in eight (8) Latin American countries: Argentina, Brazil, Chile, Colombia, Costa Rica, Ecuador, Peru and Venezuela.
For the SALTEN Project, a series of educational worksheets were developed for students to complete. Due to the impact and reach of this project, and in line with the public benefit policy, it was decided to share this material for use by all interested professionals.
